"Eggplant Omelette"

Ingredients:

1 Small Eggplant
3 Garlic Cloves
1 Large Onion, Sliced
1 1/4 cup Olive Oil
6 Eggs, beaten
1 Tsp. Cornstarch
1/2 Cup Milk
Salt and Pepper to Taste.


In frying pan, fry eggplant, garlic and onion gently in oil until they are cooked (appx. 5-10 mins).

Beat eggs. Make a paste by mixing cornstarch and a little milk

Add remaning milk and mix well with eggs and seasoning.

Pour egg-milk mix over the cooked eggplant and cook as an omelette.
